To help with new tender growth, and by mowing it also helps reduce weed growth.
And the deer love the new tender leaves of the clover. See without mowing the plant will become tough and less palatable to the deer. Plus deer aren't like fenced cattle, they brows all over, and can't keep it ate down. Where as with cattle you move them from one pasture to another to let the vegetation grow back. Have to keep the deer in our neck of the woods happy, and full.:biggrin2:

Ok, this is DEER food! That makes more sense.

I was thinking that people food should be WAAY too tall to mow over by now. :)
