Would a change in the steering wheel help? A larger size or perhaps a "spinner knob"? But let me add this. With a bit of creation, I think that a linear actuator could fit the bill, eliminating the steering wheel and replacing it with a two position switch, joystick style. The response could be a bit slower, but you could easily adjust to that. And there is a lot of creativity here on this site so perhaps others can chime in with an idea. I think this is a worthy challenge.
