I'd use the single peddle treadle style design. If you want to drive into a pile of gravel and scoop and change directions all smoothly and simultaneously it's the best. Assuming your leg and knee and ankle joints are good you can smoothly rock your foot and change your motion. Two separate peddles require full stop and pivoting or lifting and moving your foot to the other directional peddle.
It comes down to what ever you like best and will work for you.
