My experience changing from 4 ply to 6 ply on a pick up truck was that the 6 ply tires were more stiff. When I towed a trailer with the 6 ply tires, I had a lot less trailer sway. Cornering was more solid.
In the case of a garden tractor, I would suspect that a 6 ply will bite in better and a softer tire will do less damage to soft surfaces.
The heaviest I have used on a pickup were 10 ply mudders. Even if I aired down to 12psi, those stayed stiff. The contact patch didn't grow. The off road guys who do a lot of "rock hopping" seem to like those because they are hard to tear up.
I think that R2 tread style tires in 10 ply are available in sizes that fit on the wide rear Cub Cadet rims. I don't know that super stiff industrial tires like that would provide an advantage here. I mostly see those tires on skid steer equipment.
