There should be a section in the service manual that shows how to set down pressure.
As for the Cat 0, it gives you some options of larger equipment than you would normally get for a Sleeve hitch. Down side is the $$$$ of Cat 0 equipment. You can buy a lot more Sleeve hitch attachments for less money and still essentially be able to do the same things as you would with a Cat O. Personally I like the sleeve hitch set up for the GT's and I am actually looking at an attachment A frame for my Cat 0 lift on my 982 so I can use the sleeve hitch attachments I already own.
