What about using a simple 1/4 turn ball valve? Would that work?

Okay, first off, you don't ever want to leave something hanging by means of hydraulics. You're just asking to get hurt/killed. If it's something you really want to do, install a mechanical lock on the device somehow. You can go by means of a ram lock (like in the pics I'll include), or with some other rod you can lock in place that will allow you to take the pressure off the hydraulic system. You have to think safety/worse case scenario when you're dealing with stuff like this. Make a few different sized ram locks so you can pick which one you need if you've got to leave something hanging. It would be best if you didn't, but at least this way you're somewhat protected in the event your hydraulic cylinder gives out with you near it.
