It depends on your clubs rules. Some rules state that the lip over the cylinder to the head gasket surface needs to be visible. Then you need to leave a .001 or so there. Typically you can take .017" to .020" off, but you do need to take measurements before starting. If there is no rule like that, then the only thing holding you back is the valve lift. A stock head gasket compressed is usually around .040" to .045". You can get a .031" head gasket from Super Cub.

If you just want more power and not concerned with some silly rules,
put some modeling clay/ bubble gum on the valves, put the head back on with gasket and 2 bolts. slowly roll it over with your hand to compress the clay then remove the head and measure how much valve-to-head clearance you have. That is the max you can remove. I like to stay maybe .010 less fudge factor. I have taken off .050 but your results will vary. You will notice a pronounced "spiffier/peppier" throttle response, from idle to max rpm's
